Genes to Know About: MTHFR – I got all nerdy over this article about MTHFR because genetics is fascinating. I carry one mutated MTHFR gene. Though not so severe as most people who suffer MTHFR gene mutations. But this mutant gene is why I cannot eat gluten and I suffer from migraines and skin problems when I do. It’s not really the gluten that does me in, per say. It’s the folic acid that most gluten-containing foods are fortified with. Plus the lectins that my body has a hard time processing (see the fourth link above). This is also why I was so quick to develop a B12 deficiency when I was vegan over a decade ago.
