Stuff I Ate: 11/8/17

Hi. How’s it going? I need to keep this short since I forgot to pre-write this post. So now I’m sitting here on Wednesday morning trying to do this and a bunch of other things while getting ready for work. Can I just be my own boss already?

Well, no. Actually, I might go back into the classroom full-time as a teacher. Right now I’m just support staff for reading intervention. I like it because it’s super stress-free. So everything is still up in the air. But a 2nd grade position might be opening up soon. That’s still TBD so I’m not getting my hopes or my anxiety level up yet.

Okay, now onto the food.

Our mornings here in Boise have been frigid. Like yesterday, it was 22° when I woke up. It’s a little warmer this morning, but not by much. Bulletproof coffee has been warming me up most mornings.

Lunch was scrambled eggs, roasted veggies, and sliced avocado.

That’s just what I was craving. I don’t know why. I also snacked on a handful of mac nuts mid afternoon. And I enjoyed this delicious probiotic drink from Farmhouse Culture as well.

Have you tried these? It has some kraut juice in it which probably sounds gross to you. But it’s actually really delicious. It tastes mostly like strawberry with just a tiny hint of the ginger beet kraut juice.

For dinner I made cauliflower soup and crumbled some bacon on top. Plus more roasted veggies because my fridge is full of vegetables thanks to a successful farmer’s market haul over the weekend.

Do you shop at farmer’s markets? I love the downtown Boise one. And I’m so glad they decided to move it indoors for the rest of the season. That way I won’t turn into an ice cube while I shop. See you next week!


  1. That soup with bacon on top looks amazing! I was really impressed with all of the markets in Barcelona. They’re daily and every neighborhood has one!

      We need more daily farmers markets in every neighborhood here. Then maybe people would stop eating so much crap. Also, I need to go to Barcelona.
