Happy almost Thanksgiving! I’m staying local this year and making stuff at home. So far on my menu I have butternut squash soup, green beans sautéed in white truffle salt ghee, mashed cauliflower, cranberry relish, and a blueberry crisp for dessert. I’m not going to attempt to make a homemade pumpkin pie this year. And someone else will have to be in charge of the meat. I’m not a huge fan of turkey. I tried making a small one last year but wasn’t impressed. I’m thinking short ribs or a whole roast chicken instead.
I’m off work this week for Thanksgiving break. My weekend was a busy one since I was in my NTP workshop for three days straight. And they were nice days too. So of course now that I have some free days, it’s all rainy and gloomy. I mostly stayed indoors yesterday and goofed off with some filters on my InstaStories.
I also played this game I made up called ‘Annoy the Cat’.
He loved it. Clearly.
And here’s what I ate.
I have more time in the mornings when I don’t have to go to work so I can actually make breakfast. This was a late one after grocery shopping. I found Birch Benders paleo pancake mix on sale at the Co-Op so I decided to make some pancakes in vanilla bean ghee (also on sale at the Co-Op, but currently out of stock).
Another thing that I found on sale at the Co-Op was this Health-Aide kombucha.
All the flavors are on sale for a really good price. So with Patrick’s discount, this actually comes out to be around $2 a bottle.
I made a quick lunch of grilled veggies, sliced avocado, and a grass-fed beef patty topped with mayo.
Because I love veggies so much, I had to roast more for dinner. This time with salmon covered in homemade dill aioli and a side of kale chips.
