Stuff I Ate: 12/6/17

Hi. I just realized I forgot to post what I ate last Wednesday. It’s a shame because I had a really delicious Thanksgiving meal to share with you. Don’t worry. I still have the picture saved. So here you go.

I didn’t want turkey so I shredded up some leftover short ribs. I also made more butternut squash soup. Plus I made green beans in white truffle salt ghee, mashed cauliflower, and cranberry sauce. I love holiday meals. It’s an excuse to eat more than I usually do. And to not feel bad about stretching out my stretchy pants.

In other meals…

I’ve been drinking rocket fuel lattes (similar to bulletproof lattes) with decaf coffee.

And no, I didn’t get a new table. I made a cheap photo box.

It’s starting to collapse because King thought it would be a good idea to try and step on the top. The top is made out of a Dollar Store plastic table cloth. Even a 12 lb. kitty won’t be supported by that. But it’s still functional.

I used up the rest of my Birch Benders that I found on sale at the Co-Op the other week.

I feel slightly rebellious when I eat breakfast foods for other meals.

I’ve been eating dark chocolate squares with some almond butter for snacks lately.

Theo bars were on sale 2/$4 at Fred Meyer’s for a while. I can’t pass up a good sale. And no, I didn’t share this snack with King. He has his own kitty treats to enjoy.

Dinners have been veggies and some sort of meat protein, per usual.

I also really like Farmhouse Culture garlic dill pickle kraut with dinner. I’m getting sick of salads. Salads are more of a warm weather food, and it’s been way too cold in Boise lately.

I drove to Utah over the weekend to see my friend Bethany and her family. It was warmer there. But on the drive home I realized why the mountain area on the border of Utah and Idaho has no civilization. I drove through a massive blizzard coming back to Boise Sunday night. That was my first snow experience of the season. So far it looks like there’s no snow in the forecast in the treasure valley. So I’m hopeful that it stays away for a little bit. I like snow and wintertime but I can also live without having to drive in it. Have you gotten snow in your area yet this season?

    Well done making your own light box. That’s something I’ve had on my mind for a while. I should google some instructions again…

    Ugh winter driving is the worst. No snow here where I live, by where my parents live there are all sorts of snow storms and semis tipping over on high ways. Do not like that part of winter :(. Travel safe!

  2. I remember driving a lot on those rural ID, UT, MT stretches where there is nothing for miles. Hope the snow stays away. We got the first storm and hit of cold temps this week. Stay warm and enjoy your new coffee blend!

      It tried to snow the other morning. But really it was just ‘frozen fog’ and melted a few hours later. So we are still snowless, thank goodness. And it looks like there’s no snow in the 7-day forecast either.
