I haven’t shared what I ate in a while so I thought I’d pop back in to update you with what’s going on.
I’ve been really busy lately. I officially have 4 jobs. They’re all part-time, but they’re keeping me busy. I am working part-time in the special education department at a local elementary school doing reading intervention strategies with kiddos that are below grade level. I recently started babysitting 3 boys after school for several hours a day. I am now doing demo sales for a start-up supplement company a few days a month. I have also been freelance writing in my spare time. What spare time? Did I mention that I’m also in ‘school’ to become a Nutritional Therapy Practitioner?
I created another site so my goal is to slowly phase this one out. I wasn’t going to post on this one but got a few requests from my adoring fans. Who knew people read this? No less than 6 people have asked where I’ve been and have mentioned that they missed seeing what I eat. I understand. I kind of enjoy food gawking too.
So without further delay, here are some recent meal highlights.
I’m back on a ketogenic protocol to help with PCOS symptoms. Why I ever stopped eating this way is beyond me. I’m feeling amazing and everything I eat is delicious. For example…
Here’s a recent breakfast.
It’s an omelette with nothing in it but a ton of butter on top, flax bread with butter, broccolini, and some roasted cherry tomatoes.
A recent lunch I had included a leftover baked chicken thigh wrapped in bacon, plus red leaf lettuce with green olives, a teeny tiny sliced avocado (yes, they’re really called teeny tiny avocados and I get them at Trader Joe’s), Farmhouse Culture dill pickle kraut, and Primal Kitchen Foods ranch dressing.
Meals like this keep the snack monster away. If I do feel the need to snack, I usually grab a handful of macadamia nuts or pumpkin seeds. And if I need something sweet, I’ll have a square of 85% dark chocolate.
On Sunday night Patrick was busy watching the Vikings game, so I busted out the Instant Pot and made some garlic herb pulled chicken.
It was so simple to make and it was full of flavor. I also roasted a giant veggie tray and had some more Farmhouse Culture dill pickle kraut.
